- Charred Pineapple and Pepper-Seared Duck Breast with cabernet and balsamic reductions, paired with DeLille Cellars 2014 D2 Bordeaux Blend & 2016 Roussane
- Slow-cooked Short Rib over faro and duxelle potatoes with dried cherries and red wine veal jus, paired with DeLille Cellars 2001 Chaleur Estate Bordeaux Blend
- Red Wine-Poached Pear with spices over vanilla sponge cake with black pepper sweet custard, paired with DeLille Cellars 2003 Harrison Hill Bordeaux Blend
